He was a really important factor in all of the movies and in Avengers specifically, tying all the characters together and motivating them to fight as a team. It could be argued that he, moreso than anyone else in the movies, is responsible for the creation of the Avengers. I think that's a bit more than just a disposable character.

So yeah, he's the only real common denominator in all the movies. Fury and Tony are close seconds, as they each show up in three movies (they both appear in both Iron Man movies, then Fury appears in the end of Captain America, while Tony appears in the post-credits scene of the Incredible Hulk).
