I completely did not get what the deal was with that concept. Then I read a couple of well-written ones and realized it was a stylized version of D/s kink, which is right up my alley, so, yeah, convert over here.

But your issue isn't "what is up with Omega fic," it's "why is so much of the kink in my fandom something I really, really don't like?" You have all my sympathies. That's an annoying place to be, yeah. And this is the right place to vent how annoyed it makes you.
