What I say about Winry is that she's amazing. (Except where some of her violence-played-for-laughs doesn't sit well with me, but it's more in the manga's presentation of that kind of thing than the fact that she does it.)

And I can't be the only one here who loves Mei Chang.

She is. She's a talented girl in her field, she's hardworking, she's determined, she's kind, and while a lot of people criticized her for not shooting Scar when she could, I think it's a good thing she didn't succumb to revenge and violence. So what if she's waiting for her friends and marries Ed in the end? She still had her life going on beyond the guys, and I think that's awesome.

Dude, I fucking adore Mei. She's so badass and adorable.

I have to say I ship Ed/Winry but one of the reasons I love Winry is because, like you said, she has a lot of life and definition outside of Ed. And if they did get married it would be a good example of how a woman can choose to get married without giving up her life. now I want fic

There's lots of excellent Ed/Win fics out there. You may have to look around a bit, but you can find them on AO3 and (if you look hard enough for the gems) some on ffn. It will be well worth your time, and many of the writers are under appreciated.
