Familiarity. Either what is normally done in fiction, or with the world they grew up in. If they and most of the people they know are white, chances are they just default to it. Same reason Japanese people don't need to be convinced that anime characters are Japanese--it's just what they assume.

tbh that was my assumption at first. i didn't know texas was asian either and i feel ashamed that i didn't notice. in hindsight i can see it, but at the time i just didn't pick up on anything in their character design, which i should have :x

I imagine because he's not super dark, and because there are white people who have naturally darker skin than others, or even just tan often enough that they appear darker, but are still white.
that said, that's only a good excuse if you haven't heard that the creators confirmed that he's nonwhite, and even then falsely assuming he is white does not mean that he is.

I guess it's possible that a character with a design like that could be white, but that's definitely not the assumption I would have made (I don't know who it is, but for some reason I figured he was native american. idk)

While that might be a problem in general, I don't think many people assume Mike is white.

Hell, most fanart seems to make him darker than he is on the show.

Every Mike I have ever known has been Italian. So I did assume some Italian ancestry in there.

But you know, obviously it's a popular name that carries over across ethnicities.

You mean Mike? What. I haven't been in this fandom for a long while, but last I knew, everyone was so sensitive to Mike being non-white that black and white sketches were accused of whitewashing.
