How about movies?

Nausicaa in the Valley of the Winds is beautiful and amazing, and a futuristic fantasy.
Laputa is also lovely, and takes place more or less in the same universe.

Series:
My favorite is Fullmetal Alchemist: Brotherhood, but it's probably longer than you want. Steampunk-ish fantasy piece on the horrors of war, the joys of family (birth and otherwise), and lots and lots of magic alchemy. Fullmetal Alchemist (2003) has a rather different storyline, as it was completed long before the manga both stories were based on was finished. Both are decent (I prefer the manga to either, though).
Cowboy Bebop is pretty cool; futuristic, has some really eccentric characters, and a few movies, as well. Three bounty hunters, a savant child, and a mentally-enhanced dog track criminals around the universe.
Moribito is absolutely lovely, about a woman protecting a child prince in early Japan.
