When I was unemployed and depressed eating healthily was literally the only thing I did on a regular basis. I might not have dragged myself to the shower more than once a fortnight, but I sure could spend upwards of three hours in the kitchen every day. Find a handful of meals you can make that taste really nice and that collectively satisfy your basic nutritional needs, and then cycle through them regularly (and if you find you like cooking: experiment in between!). Make them in large portions and freeze the leftovers. Keep large quantities of the dried or tinned ingredients you use regularly in your cupboards and stock up on food that can be made really quickly or with a minimum of effort in case you're too depressed to cook (for me: eggs, pasta, soups, baked beans, potatoes, sausages). Try not to buy ready meals if you don't want to eat them :) Given practice and some good recipes, you might find that home cooked meals taste twice as nice as anything pre-prepared.
