If you're not averse to TOS, try to get your hands on some of the old Simon & Schuster paperbacks (there is also a torrent floating around wth all of them), particularly Doctor's Orders (McCoy is the only command officer left, and ends up taking the bridge) and any of the books with Joanna McCoy (his canon daughter) in them...the plague planet one (ugh can't remember the title) is a great character study of McCoy. IMO.
