When I was in elementary school, I was the weird kid who traded my sandwiches for the Jewish kids' matzo.

I would seriously eat the heck out of matzo pizza. That sounds absolutely amazing. I might have to get some matzo next week (it'll be on sale, along with all the Easter stuff, heh).

If you do get matzo and want another way to use it up, I made matzo crunch this year and it was easy and delicious.

OMG DO WANT!

Cover the bottom of the sheet with baking parchment — on top of the foil. This is very important since the mixture becomes sticky during baking.

I'd use this: http://www.reynoldskitchens.com/products/pan-lining-paper/ instead (no, I don't work for Reynolds or anything like that; I just love that product, LOL!).

When we go to the store tomorrow, I'm going to look for matzo on sale... :D
