I heard this great phrase once, that the best fandoms are inspired by "canons you can drive a truck through".
That was in reference to Glee (because continuity?? characterization??? it doesn't make sense! we need to make it make sense!) but can obviously be applied to Harry Potter or Supernatural.
Something that initially gets you excited, and then lets you down with unsatisfying world or character development (you can say hot guys... but I don't think those fandoms last).

I think that's overly specific, but IA with the general idea. I think it's more "canons that deliver on <20% of the potential it initially sets up". Which could be simply a function of the particular story being told in that book/show/whatever, so not necessarily a letdown, or it could be what you said.

For example, Star Wars. Tells one story of a potential 284,384,096 other stories that could be done in that universe with those characters using any fraction of what happens in canon -- from nothing but setting to setting and backstory only to one movie to two movies to three movies -- to fuel your discussion/merchandise/pop-cultural osmosis/memes/costumes/art/fanfic/etc.

You're totally right!! It's not about "letting us down" so much as just leaving us hanging. "Us" often being people who get more excited about worldbuilding and relationships than can feasibly be satisfied by a single movie, book, or tv show produced for mass consumption.
I just stared at that sentence for a full minute, I hope it makes sense :\
