Probably a case of Seinfeld is unfunny?

I'm not a great fan of his writing but I'm pretty sure he's so admired because he was very innovative when he started. Look back at what was around when he published his early work and you won't see many things that compare in terms of style and genre. He was also pretty counterculture.

Reading his stuff now... It's good but it's not great.

This. A lot of his writing seems cliched and repetitive now because he spawned a lot of copycats (though he did rehash a lot of plot points in his own works too.)

He's not innovative. He's a popularizer not an innovator, someone strongly influenced by a lot of people who aren't much read, rather than someone innovative himself. Arguably he brought those things into the mainstream and put them in a much more accessible form - some would say in a more enjoyable form - and certainly he gave a lot of exposure to things and shaped stuff in that regard. But he wasn't novel or innovative, he was very much working within a tradition, and I think he'd be the first to admit it.

I don't think he's been outpaced by the times. I do think people probably react to his popularity and get too hyped and then disappointed, but that's not necessarily the same thing.
