Ugh, I hate that. I'm the same way and I tend to ask for charity donations when I can (or gift cards/money if I'm especially poor at a given holiday). Luckily, most of my family members are pretty good about not going out and buying things that people don't want or need just to have something physical to wrap. My stepmom is the exception to the rule, though, and has a habit of buying me and my brother and sister things just so there's an even number of presents and ends up getting a lot of stuff we really can't use. I appreciate the thought and trying to be fair on the one hand, but on the other, if I ask for gift cards or donations it's because that's what I actually want, and insisting on buying physical objects just because is a bit thoughtless.
