The gypsum/plaster squicks me, I am NGL, but eh, it's a natural mineral, I can deal. The fact that it might be synthetic gypsum, which is a by-product of basically one of the pollutants that is causing climate change? I'm not so chill with that. Not to mention that it's probably highly-processed, and/or toxic?

When tofu is supposed to be an alternative to having to deal with all those things.

Uh. I should say I'm not some crazy, picket-waving vegan or anything. I just can't eat red meat, or very much of it, anymore. So finding alternate protein sources was...interesting...and tofu has always been my go-to.

Have you thought about making your own tofu? There are tutorials and recipes you can use, and it's rather cheap. At least this way you're sure of what you're eating.

That looks hellishly detailed and time-consuming, and I likely wouldn't be able to get the natural gypsum, so I'd be stuck with the drywall powder...which I'm not a fan of.

Soybeans I *can* source, however, so I might use the first part of this video to make soymilk though.

Well, if it helps anything, it says that synthetic gypsum can be used for SOME of the uses that natural gypsum is used for. I feel like, if there is any use that industrial byproduct artificial gypsum is not going to be acceptable in, culinary use is probably it, you know?
