As for Hannibal, I find the show fascinating and have thought about looking for fanworks, but...I just have a feeling the fandom is going to be a huge letdown.

good instincts. it's an artsy, critics' darling kinda show. fandoms for those are always letdowns.

fandom is at its best when dealing with source materials that could use some (or a lot of) fixing.
