The only one I can think of off the top of my head is Leela and Fry from Futurama. Leela was pretty against dating Fry for most of the earlier seasons (although that Titanic episode says differently) however she caved in later on, seemingly because Fry was so whiny? I haven't watched much of the later seasons when they finally get together.

She came to terms with her feelings for Fry twice, IIRC, once in the finale after the ordeal with the holophoner concert, though that was kind of ignored when the show came back. And then it happened again when she was separated from Fry for a long time with the Feminista environmental radicals.

Neither was as a direct result of Fry's needling, though. If anything, it was more in spite of his needling than because of it. And from the very beginning, it was implied she liked Fry but kept getting fed up at the fact that he was incredibly stupid. However, the show didn't have much continuity, so it was more of a running gag than a continuous arc. Like, stuff would happen that would be gone in the next episode.

Also there was the time that they went to an alternate universe where she did agree to go on a date with him and they were happily married
