Because looking at the show, she has one of the richest and exciting lives in it. That she has a tragic and painful love story as well just adds to the character for me because of the way it's handled; instead of burying herself in passive angst, she turns it into something that enriches her life. That River is at least initially motivated by her love for the Doctor doesn't make her a weak character. In fact, how many classic heroes haven't gone on adventure to either earn love, or escape the tragic effects of it?
This is what I think a lot of people do in lazy criticism, though; reducing a character to one line of dialogue to make it represent the whole of their personality and design. The more characterisation there is, the less sense this makes (and it's not as if it only happens in Doctor Who).
I think that's another thing about Moffat's writing; it's not clearly dividing up anything in right and wrong, just and unjust. Situations have messy resolutions, relationships are ongoingly messy, people have many sides and even though they're a good person there are bad sides - real bad sides, the sort that are a little unsavory and truly unsympathetic - to them too, and they won't be "called out" and punished for it in a nice and tidy manner. The effects will be part of the plot and in the more realistic reactions of the other characters instead.
The Doctor especially is both good and terrifying because of what and who he is, because of all the things he's seen and done (and sometimes been forced to do). It's not something that can be repaired, it's who he is.
The possibility that he will step over the line is always there, and sometimes he does. Moffat's characters are generally very faceted, and you can never trust that they will have the right or correct opinions and solutions despite being main characters. Not even if they're ancient Time Lords. Not even when they're trying to do the right thing. It's never "these are the good guys, and they're always right", but, "everyone has their reasons, and you never know all of the story". He doesn't write characters who is innately always right and just; he writes people. Who can be good people and still have their doubts and fears sometimes take over. Who we can't always tell if they're really good people or not.

I admit, I can see where people get the whole River's life revolves around the Doctor thing from but I think they really make it bigger than it is. I actually think, along with the increase in immaturity, the big thing for that is the fact that we don't see River when she's not around the Doctor and is off doing awesome things on her own. She clearly has a rich and vibrant life away from him (for example, her life as Melody Malone, which only involved the Doctor after Rory appeared unexpectedly) but, because all we get are her appearances on Doctor Who, it seems like she doesn't do much else.
