Well, Arstan was because there wouldn't have been much of a reveal there. In the books we didn't know from the description that he was a preexisting character, but in the show we would have recognized the actor, so there wasn't much point to hiding his identity. No idea how true that holds for Reek, though.

I think they could have done something with it for an episode or two - the characters wouldn't have known who he was. It's a shame they didn't show his good sense in staying in disguise while he figured out whether or not Daenerys was insane.
