"In the Cards" is cute. I also thought of "Civil Defense" right away, which I know has some other fans here on f!s. Another one I'd pick is "Things Past"- it's not really run-of-the-mill in the sense that it's not about the characters doing their jobs as normal. I'm a sucker for DS9's ambiguity, and this one is an showcase of character development for Odo as he literally revisits one of the harshest judgements he made during the Cardassian Occupation. It also has a lot of Garak, always a plus for me.
