I've seen it being referred to as "the other, other white meat". Apparently, since humans have so much in common with pigs, they have a lot in common with pork too.

Alana did taste something odd in the beer. Not enough to think mild-mannered Dr Lecter would viciously kill people and turn them into alcoholic beverages and fortune cookies, mind you, but it's something!
