I'd heard both, but I've always believed it was muster, from the old military expression 'To pass muster' (muster from the Latin monstrare "To show") meaning to be up to inspection standard.

Sure, but they're not interchangeable. 'Cut the mustard' and 'pass muster'. You wouldn't say 'Pass mustard'.
Unless you were eating.

Further research is required, I'll get back to you.
But I always thought the term 'Cut the muster' came from 'Pass muster' given that they essentially mean the same thing.
I'm unfamiliar with and mustard expressions that could have developed into 'Cut the mustard'. 'Kean as mustard' maybe? Dunno. Will research 'Cut the mustard' and see where it comes from.

Either way, both have been used, but I only know of the background for muster.

Origin of 'mustard' seems hazy, though apparently it was known slang as far back as the 1870's.

But then, i only did about two minutes of looking.

Yeah, there's a lot of links to mustard being used as 'To be energetic and full of zest' which explains the term 'Keen as mustard' but it's the cutting part I'm trying to place.

It exists as a term, I know that, I just can't find out where it comes from. My theory is still that it's originally from muster. Will get back to you.

This is fun. I like etymology.
