You might like

El Cazador de la Bruja - it's about a bounty hunter named Nadie who ends up biting off more than she bargained for when she agrees to protect a weird young girl named Eris. It has a neat Southwestern theme, and while it can lay it on a bit thick sometimes, it was really fun and really sweet, with a nice mix of serious drama on the side. If you've seen Noir or Madlax, this was the third project of Bee Trains "girls with guns" series, but it's much more lighthearted.

Yuris undeniably implied.

Ghost Hound - by the guy who did ghost in the shell, a paranormal psychological thriller with a neat story and fucking beautiful visuals.

Toward the Terra - TV adaptation of an old sci-fi series by the lady who is responsible for 'song of the wind and trees'. Despite what it sounds like, there are some BL vibes along the way, but they're sparse and aside from pair, hardly noticeable.

Humanity exists as part of a "Big Brother"esque society ultimately controlled by a super computer called Superior Dominance. They are at war with a group of psionically superpowered humans called the 'mu', who travel the stars in their giant spaceship searching for their ~promised land~, terra.

Tokyo Godfathers - three homeless bums--an old washed up man, an old washed up tranny, and a young runaway girl--find a baby on christmas eve thrown out in the trash. Hilarity and heartbreak and extreme sweetness ensues.

Sousei no Aquarion - Fantastic Evangelion clone with lots of good music, its own creative twist on the mecha system, and a lot of fun. Reincarnation, Angels, Giant monsters, a vampire loli! How can you go wrong?

Monster - Dr. Tenma saves a young boy, he and his sister were the survivors of a political assassination plot. Due to various circumstances, it costs him his job, and eventually leads him on a chase all across Europe, and deep into an investigation with roots back to the darkest legacies of WW2~*

Mononoke - A medicine seller traverses japan, sealing demons, solving person problems. Awesome, trippy visuals. Someone else mentioned Mushishi, and it has a strangely similar concept, but is much more supernatural.

Jigoku Shoujo - Episodic horror about a website that only appears at midnight. If you type in the name of the person you hate, Enma Ai will appear before you, and will make you an offer to carry out your grudge.

Episodic anime about people sending other people to hell, with an overarching plot that comes together through seasons one and two. It's a lot better than I make it sound.
