I guess I don't understand what you mean here by "she was just an exploit." I feel left out not getting it.

Maybe they meant "expert"?

An "exploit" in video game parlance is a glitch/bug/issue in the game that can be exploited by the user to gain an advantage. Vanellope's glitchy teleporting around the track is indeed an exploit if the user can control it well enough to win. (If they can't control well enough to win then it is just a bug that affects user enjoyment of the game.)

Not having actually seen the movie:

An exploit (in gaming terms) is a specific type of glitch/bug (or oversight) that makes the game easier than it was intended to be. It's a cheat, if you will, but not one the game creators counted on. I'm assuming that whatever "glitch" she has actually came with an upside that she would not have had otherwise - sort of like being "so beautiful, it's a curse;" it's not really a "curse" if it gives you a leg up on everyone else.
