I think the main issue that most of Tumblr is conveniently forgetting is cultural context. Non-binary genders are not a thing that exists in Japanese culture so I very much doubt Isayama intends for Hanji to be read as non-binary. It's far more likely that he's just leaving the matter ambiguous for the time being and will confirm it one way or the other eventually, but right now he himself seems to be treating it almost as a running gag every time people ask about it.

People are taking a lack of information to be information, and chances are, they're wrong.
