I enjoyed The Vampire Tapestry by Suzy McKee Charnas. One of the stories has the vampire telling a therapist all about how he hunts people, while she tries to figure out what his 'story' really says about him. It's a good twist on the genre.

Seconded.

I also really enjoyed The Historian by Elizabeth Kostova for the most part, and the short story Girl With the Hungry Eyes by Fritz Leiber (although that's less straight up blood drinker and more of a throwback to ~the vampiric~).
