Maybe you're just not used to subtitles?

I assume that yours were at least loyal to the original. My country's translation ruined the significance of scenes where Haytham calls Connor his son, by having him call him that almost every time they speak.

No, the subtitles just suck really hard.

I have sensory processing issues that mean I can't always pick dialogue out from the sound effects/BGM/room noise, and AC is unplayable for me because the subtitles are literally unreadable on my TV.

It's not just you. I normally don't use subtitles in games, but the sound in AC3 was TERRIBLE. EVen in a quiet room with no A/C on I couldn't hear any of the eavesdrops.

Not that the sodding subtitles helped, because they are just about illegible. We tried two TVs and all the settings available and nothing helped.

There's a good chance it's not not being used to subtitles. I am - I usually have subtitles on when I watch something, actually, but I literally cannot read AC's subtitles - and this game was even worse than the other's have been in that aspect.

I use subtitles on most things, and had a big problem with ACIII's use of them. I play on a smaller, non-HD TV, and had trouble reading them even sitting close.

I with there was some option to alter the size of them.
