Okay, I'm just marathoning through the series like right this instant, and how I see it is Hannibal knows Will has too much empathy for the killer, and he is a killer so, in his own twisted sense, he knows Will will empathize with him. And I also agree with anon up there, that he is dragging Will to his own level to do so.

Also adding that the whole "giving him food that will make his Encephalitis worst" is a way of keeping control over him.

Anyway, those are my 2cents. Like I said, I'm looking at it with newbie eyes.
