I'd say Gunnerkrigg Court but that has some... horror-y elements? It's mostly an adventure comic though.

Ah, beat me to it!

I'd hardly call it horror, though. It's more like... schoolgirls at a mysterious school of magic and science, and weird things happen.

I highly recommend it. And yeah, it has its darker moments, but it's not in the horror genre at all. Definitely give it a try.

Doctor Cat MD. Short stories about a cat, who is also a doctor. Cute and sweet.

Bouletcorp (English version) - Not so much a webcomic than a comic artist and writer doodling about dinosaurs, daily life, and science.
In this vein, you might like: Kate Beaton (Hark! A Vagrant!) and Gingerhaze (although her work is a bit different).

Cucumber Quest, Nimona, and Girl Genius! Those are probably my three favorite webcomics right now; they're all amazing. Cucumber Quest is, imo, one of the best-looking webcomics out there. It's adorable, and it's consistently funny, too. Nimona is great; it's about a punkish shapeshifter girl and the supervillain she works for, set in a somewhat high-tech yet medieval-styled world, which is an interesting asthetic. And Girl Genius is just an incredibly fun adventure in MAD SCIENCE!

One that I'll recommend with some reservations is DMFA (Dan and Mab's Furry Adventures). The caveats - 1) You have to be okay with furries, because all the characters are furry. 2) The first several chapters are kind of bad. But it gets much, much better, and by now it's a comic with some good art set in a really fascinating, very detailed world with some pretty cool characters.

Seconding Kate Beaton's stuff. It's got a lot of historical/classic literature references; not sure if you're into that or not.

If you like or are somewhat familiar with video games, there's Manly Guys Doing Manly Things. And then one of my personal favorites is Girl Next Door which is sort of crossover explosion, the main four being Labyrinth, Phantom of the Opera, Pirates of the Caribbean, and Les Miserables. It... makes sense in context.

And of course there's always *cough* Homestuck *cough*.

Spacetrawler!

It's about a group of humans who are abducted by aliens to join the fight to liberate an enslaved alien race, the Eebs, from the tyrannical Galactic Organizational Body. And it's really good, and nothing is really as it seems, and all the characters are AMAZING - seriously, I kind of love every single character in this comic - and it's funny and thrilling and thought-provoking and really, really good. Check it out.

It's a fun, western type comic and it's also complete so you don't have to worry about it going dead. I thought the ending was a bit too abrupt but it had a happy ending so I'm not really complaining much.

I like this one because I like detective stuff and the female lead is a couple of decades older than the male lead (who may be her love interest at some point? Seconding Unsounded as absolutely lovely in story and art and worldbuilding (if you ever get an itch for details... check the massive Formspring archive). Also one of the best uses of "webcomic" as a medium that I've seen (i.e. playing with the idea that pages are "framed" on a webpage - but don't necessarily have to be). I found it through F!S and am eternally grateful.

Gunnerkrigg Court is also one that I check every update.

Others include:
Vattu (rice-boy.com) - Overside is a universe with all sorts of non-human races, and Evan Dahm does an awesome job of fleshing out the cultures and interactions. Especially getting interesting now as the separate character lines start to cross. If finished comics are more your thing, his previous Overside universe comics are epic, and completed! (I think Vattu is the best yet though.)

Namesake (namesakecomic.com) - If you like literary crossovers, you'll love this. Characters from different stories are "namesakes" in our modern-day world; they might have a few more powers than normal though, and our world is not the only one... Some really nice original characters and twists on canon characters from different tales. Stories touched on so far include Wizard of Oz (the main first arc) with characters from Alice in Wonderland, Peter Pan, etc.

Ava's Demon - Another comic that plays with the idea of a webcomic being a webcomic. Each "page" is a single panel that flow well into a sequence. The vivid colors are eyecatching and defining, and each chapter ends with a video. Space traveling age, but so far "magic" of the "demons" (who are fleshed out characters of their own) has played a bigger part.

And I just started today, but am really enjoying
Family Man (www.lutherlevy.com/) Takes place in 18th century Germany/France, following a scholar/lecturer of the time who may not quite agree with prevailing convention. Meticulously researched, and there are period notes written up if you're curious for more! Outfoxed and Bite Me! were two fun shorter comics by the same creator.

Man, everyone's pretty much already suggested my favorites.

However, I'd still recommend The Fox Sister, which is a gorgeously drawn story about evil kitsunes and a cross-cultural romance.

Sfeer Theory, by the same artist, which is a neat fantasy comic with revolutions and a very cool magic system.

Terinu, a really interesting sci-fi story that I myself need to catch up on (it went offline for AGES).

Arthur, King of Time and Space. Does assume you're already familiar with the basic Arthurian story, and the author's been having some difficulties lately so it's been mostly gag-a-day instead of arc storylines since he finished the Grail arc, but I still find it worth following.
