I don't ever recall hearing that said about Bones and Booth. Mulder and Scully, yes, but not those two.

And, yes, I know it's possible they'll change their minds, but I believe them when they say that as of NOW, they have no plan to do so.

Plus, with Mulder and Scully, it was at least partially because the fanbase had been screaming for them to get together. In Elementary, it's the exact opposite. I doubt the writers are going to alienate the fans by putting (or not putting) the leads together.

Also, didn't they get together really late in the series, after years of really good chemistry?

I think it was season eight, because I remember they were talking about a baby in season nine.
