Don't be dense. Odin presented himself to him as a human man, and probably to his mother too. He's part of the Norse mythology, which is a predominantly light-skinned people. If you say that divine genetics work differently then you'd give an excuse for people to say Anansis' sons don't have to be black.

I always imagined Shadow as being black, ok, I suppose now I have to concede the point that he's mixed race because his dad's default form is a white guy

Shadow also has grey eyes like Odin, which would insinuate that yeah, he inherited something of Odin's mortal form.
