I would guess they don't feel as free to talk about their innermost secrets as you're thinking, or else they haven't been exposed to the same ideas.

This. Most people who are into things that aren't...exactly what people consider standard don't usually feel free to talk about it unless they know the other person very, very well - or they know that person shares an interest in that. It's part of the reason the kink community isn't easy to find in a new city.

Also, you're average joe walking down the street is going to picture what the stereotypes of a specific kink are when thinking about instead of what it's actually like...and those stereotypes are usually pretty negative, so they're most likely not going to be interested in exploring them.
