I assume it's since the opening (along with the first ending) is the troll-tastic cherry on top of the whole "we're going to spend the first three episodes luring you into a sense of false security thinking this is your average, innocent moe-blob magical girl anime heh heh heh" cake.

And so people appreciate it for what it is: a serious-faced full-out parody on what the series subverts.

Exactly this. The opening is, in my opinion, very skillfully and very intentionally crafted for the purpose of disguising the show's true intent. It wears a mask to make the sudden change in tone unexpected, and thus all the more powerful.

Yes, and also speaking of intentionally crafted, I love love love how its use in Episode 10: not including it at the beginning but starting off cheerful; slowly dialing up the despair until it pretty much culminates in Madoka's assisted suicide; lingering on Homura's relentless vow; and then BAM! BRIGHT HAPPY OP!

Only now it sinks in that the opening was portraying one of the original (if not the original) timeline this entire time. They even have little details from the extended canon. Like the little black cat Madoka can be seen holding in a couple scenes; there's an audio drama where Madoka confesses that her original wish/contract with Kyuubei was to restore life to this black cat that'd gotten hit by a car.

Not to mention the first ending, which seems like total meaningless fluff for pretty much the entire series, and then the ending happens and you realize that the song that plays is actually about Madoka's crippling loneliness as she realizes - and accepts - that she will never talk to a single human being again for the rest of eternity.
