the issue with pacific rim is a lot more than just 'omg giant robots' though. legendary pictures was in talks back in the day with gainax to create a live action evangelion movie. it rotted in development hell after being shopped around to several effects firms from stan winston to weta. fast forward to ledendary pictures and legacy effects (stan winston's team restructured after his death) coming out with this oh-so original~ concept

Except Guillermo del Toro has never seen Evengelion.

Edit: Also, never said it was original but in all honesty Pacific Rim is a bunch of current and popular things that were put all into one movie. Living after a post apocolyptic event? Check. Fighting aliens? Check. Giant robots? Check. It's not original but I'm betting it has a lot in common with more that just Evengelion beacuse these are popular conecepts that may not always be used together in this exact way but are constantly being used in all media. That's not plagiarism.

so? he doesn't have to have seen it for the people writing and creating the effects to have borrowed the concepts they'd already been developing long before they picked up the spec script (from a writer who'd be contracted for a very different product and then told - 'hey write a spec about giant robots no reason just can you?')
