I think OP's referring to Hannibal's first in-show kill, when he copycatted Garrett Jacob Hobbs to see what Will would do.

Haha, maybe, and obviously Will and Hannibal are both unreliable perspectives, but I am pretty sure the final episode either had Will saying Hannibal was just "curious" when he made that first kill, or Hannibal admitting it himself.

There's a deleted scene where he meets her on a train and she's profoundly unpleasant to him, including (iirc) blowing smoke in his face.
