he didn't want to teach Jo at first because he was afraid of what Ellen would do to him if he did. When she shows up at the hunt, he doesn't send her back to mommy, and treats her like any other hunter.

He doesn't want to teach Jo to hunt because 1) he doesn't want to go against her mother's wishes 2) he's at a very different point in his character arc then and 3) there haven't been any apocalyptic events yet. Jo wasn't in a situation where not learning seemed likely to get her killed - just the opposite, actually.
