I usually play on normal - sometimes, if the game's short I'll play easy mode first, then do normal my next run (and if that's not too killer a challenge, I'll up to hard mode on my next) and with FPSs, which I suck at pretty hard, I'll just stick to easy by default - but there's no shame in easy mode.

One of the things I mislike about the Kingdom Hearts games is the fact that the later ones punish you for taking the easiest mode by locking you out of the bonus movie entirely - I don't have any real problem with the other modes reducing the number of challenges you need to complete to get it as you up the difficulty, but that's just annoying.
