Revised: I have a lot of commentaries I really enjoy (but they're mostly movies), and major bonus if it involves a director I really like. Here's my list.
-Harold and Kumar Go To White Castle
-The Lord of the Rings trilogy (pretty much all the commentaries are insightful, but I had a lot of fun listening to the actors' commentaries)
-Any work with Guillermo del Toro doing commentary but my absolute favorite is El laberinto del fauno/Pan's Labyrinth.
-The Godfather commentaries Francis Ford Coppola does
-the tv show Rome, especially when the producers/writers did the commentaries
-Mad Men, absolutely love any commentaries with Jon Hamm and/or John Slattery
-The Sopranos commentaries

PS. Any of Robert Rodriguez's action/non-kid friendly films with commentary are good, but my favorite is Once Upon A Time In Mexico.
