Actually, Bruce Banner did attend medical school. That's where he met Angela Lipscombe. He also did grad school at California Institute of Technology.

I don't think they had the time to put everything into the movies. I know they also didn't put any of Bruce's background. More than likely, it was something that the comic and old school Hulk fans would know. Kind of like all the other little nods to the comics.

Does it matter? Banner, Stark, and Richards share the same conceit that since they're uber smart, they can pull the requisite knowledge to do just about anything out of their ass as demanded by plot. Dump any one of the three in the middle of a 12th century Chinese library, and by the end of the montage they will have managed an asspull to work around the translation problem.

Given that movie canon stems from the comics canon, it's a safe assumption to make that things are not that terribly different. Streamlined, sure but it's not OMG IMPOSSIBLE that Banner has a medical degree.
