There are several different "panels" that can be done when you have blood drawn, and which are done depends on the history and concerns you bring up with your doctor. Like a lipid profile may be separate from just the basic bloodwork--what the office I used to work for called a "SMAC-25"--and more advanced liver or thyroid function tests are probably separate too.

If you want to be screened for possible nutritional deficiencies you may have to ask specifically for it.
