I wish I was able to give more depth to my answer, though - I wish I knew more about Indian cuisine. From my limited knowledge, it seems like a really awesome cuisine with a huge range of styles, but all we really get around here is a pretty basic take on it, and really only one style. I wish I knew more about the actual distinctions between different curries and other non-curry Indian dishes and I wish I was more familiar with different Indian cooking styles - like Kerala cuisine, or Bengali, or what have you. Yeah. Indian cooking seems really cool and I wish the representation we got of it here was a little better and more interesting.
