What is your favourite type of curry?

Mine is a mutton (not lamb, mutton aged at least 5 years before slaughter) biryani. Just has that right balance of strong flavour and spiciness.

I am not a curry expert, so I don't know all the types or terminology. I love Thai curry sauces - cocoanutty and slightly sweet - and prefer ones that aren't too spicy. I don't care what they are put on, but I don't eat a lot of meat so just rice and vegetables are find.

I don't think I've seen that on the menu at a Thai restaurant, but I'll take your word for it.

Technically Thai curries are not curries, but that is where it starts getting complicated.

You probably won't have seen kormas on a Thai menu because it's an Indian curry.

I have never had curry. I've never lived anywhere where Indian food is available and/or went for something else the couple of times it was. I've always been under the impression that curry is a 'hot' dish (ie: spicy), which i don't like at all. I don't even like black pepper. So i don't know if i'll ever taste it.

Well, certainly not here, as there is no Indian food available less than...*checks google*...two hours from here.

Curry can vary from the mouth blistering stuff for drunk macho idiots like Vindaloo and phall right down to the mild and sweet kormas. There is all sorts of spiced blends, and spiced doesn't mean hot it just means that it is richly flavoured. A byriani is a good one to start off with if you want to try making your own, its a medium spiced sauce with essentially meat fried up in rice. A lot of people find chicken or prawns to be their preferred meat in it, but mutton is the best.

A general rule of thumb is that tomato based curries are hot and cream based curries are milder. There are exceptions though. Also general rule of thumb is that hot curries tend to be one note as far as spices go as so many recipes are all about amping up the heat and the cooler ones have a more varied palate. Again there are exceptions, a really good recipe can give you that variety of sensation in a vindaloo and a really bad one will have a one note bland korma.

They are dead easy to cook at home though.

Interesting! There are several Indian restaurants in St. Louis (two hours away), so next time i'm there, i might have to give it a try.

My only issue with cooking it is that if i have to buy a bunch of different (and hard to find around here) spices that are expensive, and nobody likes it, i'm kind of screwed.

I wish I was able to give more depth to my answer, though - I wish I knew more about Indian cuisine. From my limited knowledge, it seems like a really awesome cuisine with a huge range of styles, but all we really get around here is a pretty basic take on it, and really only one style. I wish I knew more about the actual distinctions between different curries and other non-curry Indian dishes and I wish I was more familiar with different Indian cooking styles - like Kerala cuisine, or Bengali, or what have you. Yeah. Indian cooking seems really cool and I wish the representation we got of it here was a little better and more interesting.
