Also, Nigella's recipe for double chocolate chip cookies is pretty good. Resulted in some of the best I've made, anyway.

Never met anyone who didn't like them, either, unless they were allergic to the spices (and I warned them beforehand, so they just didn't eat them. So. Maybe they would have liked them, even with the allergic reaction.)

Recipe is per banana, and can be multiplied based on how many bananas you have; 1 banana makes two mini-loaves, 2 bananas' worth makes a small (8"x4") loaf, 3 makes a large (9"x5") loaf and two mini-loaves, and 4 makes a Bundt cake. Any number of muffins can also be made.
1/4 c. softened butter and/or canola oil
1/2 c. brown sugar
1 egg
1 overripe banana
2 Tbsp. milk (for ease of multiplying, 4 Tbsp = 1/4 cup)
1 c. all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon*
1/4 tsp. nutmeg*
1/2 c. chocolate chips*
1/2 c. chopped walnuts (or the nuts of your choice)*
*Optional
1. Preheat oven to 350F and grease pan(s) with butter and coat the insides with cinnamon-sugar.
2. Cream together sugar and butter/oil.
3. Mash banana; add egg, milk, and banana to sugar mixture.
4. In a separate bowl, combine flour, baking soda, salt, and cinnamon and nutmeg if using.
5. Gradually mix flour mixture into wet ingredients.
6. Stir in chocolate chips and/or walnuts if using.
7. Pour into prepared pans and bake until a toothpick inserted into the loaf/muffin comes out mostly clean; my oven has been a little iffy on times, but use these as a starting point and test a bit early: 60-70 minutes for full-sized loaf pans, ~40 minutes for mini-loaf pans, 16-18 minutes for muffins, 12-14 minutes for mini-muffins.

1 mini watermelon (I tried to remove at least *some* of the little white seeds and excess juice as I balled it)
[1 cucumber, peeled and chopped]
~2 tbs superfine sugar OR agave syrup
~1/3-1/2 cup light rum
juice and zest of 3 limes
mint
Mix up your marinade of rum, lime juice, zest, and sugar/agave. note: I put mint in mine too (about 5-6 tbs chopped/torn?) then put it aside for a few hours while I decided whether or not I wanted to go out and get a cucumber when it wasn't freaking blazing hot outside (and then decided to be lazy and not get one) and then I looked my marinade and all the mint had broken down because of the lime juice (yay citric acid!) and looked really nasty. But the marinade was minty! So I strained it onto watermelon balls and let it sit overnight. I put it in a tupperware with a lid and shook it every few hours to distribute the marinade. Garnish with some fresh mint and serve with a slotted spoon.
Bonus: the host gets to drink all the delicious liquid at the bottom of the container!

Sautee in ghee (clarified butter) a diced onion, a chopped leek and three medium cloves of garlic. Add salt, pepper, and your own mix of Garam Masala, made with the spices you like best. I use curry, nutmeg, clove, cinnamon and freshly (very finely!) chopped ginger. I use merkén to give it a little bit of heat ("merkén" is a spice from Chile, made from dried and smoked red chili - if you can find it, I DEFINITIVELY recommend it), but I guess you can use more "local" chili varieties. A hint of sugar also goes well. Red bell peppers and/or diced tomatoes are a nice addition, but not necessary.
Once that's nicely golden, add the paneer, diced. Cook until it takes a buttery color and it's slightly wrinkled.
Meanwhile, you'll need to cook your spinach. USE ONLY THE LEAVES. Chop them finely, with a knife for chopping herbs if you can. There will be lots of recipes telling you to just throw the stuff on the food processor. DISREGARD THEM. Palak Paneer is a kind of curry, not a creamy soup. Cover the spinach with water in a pot, with some salt on it, and bring it to a boil. Let them boil for a couple of minutes but then GET THE LEAVES OUT as soon as they reach a bright green color. DO NOT OVERCOOK THE SPINACH. Drain the water.
After you've drained the water, mix the spinach with the sauteed veggies until it's homogeneous.
If you like your curries extra-rich, you may add some heavy cream or coconut milk to the mix.
And you're good to go~ <3

Although I replace the butter with olive oil and I add Serrano and Pasilla peppers.
