Watermelon Mojito Salad
1 mini watermelon (I tried to remove at least *some* of the little white seeds and excess juice as I balled it)
[1 cucumber, peeled and chopped]
~2 tbs superfine sugar OR agave syrup
~1/3-1/2 cup light rum
juice and zest of 3 limes
mint

Mix up your marinade of rum, lime juice, zest, and sugar/agave. note: I put mint in mine too (about 5-6 tbs chopped/torn?) then put it aside for a few hours while I decided whether or not I wanted to go out and get a cucumber when it wasn't freaking blazing hot outside (and then decided to be lazy and not get one) and then I looked my marinade and all the mint had broken down because of the lime juice (yay citric acid!) and looked really nasty. But the marinade was minty! So I strained it onto watermelon balls and let it sit overnight. I put it in a tupperware with a lid and shook it every few hours to distribute the marinade. Garnish with some fresh mint and serve with a slotted spoon.

Bonus: the host gets to drink all the delicious liquid at the bottom of the container!
