If you want to get more specific you can talk about the popularity of grindhouse cinema and kung-fu movies and things like Shogun Assassin in urban areas. But really, it just comes down to a lot of people who like rap thinking that ninjas and Akira are awesome, which is totally rational because ninjas and Akira are freaking awesome.
Or they're being done ironically, in which case it's just because it's funny.
