I get so annoyed listening to my friend always talking about herself and her life. There's literally always new shit and drama in her life.

She's 'obsessed with working out' and working out for 3 hours a day almost every day and eating one piece of fruit for each meal, and I tell her that's unhealthy as fuck. Then a few days later she tells me how she's passed out but ignores me when I tell her it's because of her diet and constant stress she puts on her body. All she cares about is how she lost 8 pounds in a few weeks and she wants to lose 20.

This is only one thing, she seems to have 5 other things going on at the same time she has to talk about. Bouncing between her parents' houses to make it seem she's living with the other, getting another concussion, doing dancing until 11 pm, boyfriend drama, having a new man-friend (while she was still in a relationship, I'm unclear about but I still feel uncomfortable with)... It goes on.
Our conversations are always 80% about her telling all the same things or new updates. I've tried to call her on some shit but she doesn't want to listen, like her health. She also wants me to help her with school work when I have my own shit to do and uses her ADHD every time she doesn't listen to something. And she wonders why I'm not sympathizing anymore.

Haha, I as reading all this and thinking "Hmm, maybe your friend has ADHD and that could account for the bouncing around both in life and conversations" and then I got to the end.

Are you teenagers? Sounds like typical (if you include an eating disorder) teenager drama. If you're stressed or sick of it just back off and stop talking to her so often. Or take more control of the conversation. If she doesn't listen, tell her you have to go and leave/hang up on her.

If she's not a teenager, that does sound like kind of odd behavior, tbh.

Most people aren't that dramatic about everything.
