I always thought it was more that Cloud knew a lot about Zack and his disassociation with his own life became centred around the person he thought a hero.

In other words, he kinda did "absorb" Zack's personality, but only what he gleaned from watching Zack and any tales Zack told him.

Not at all. Cloud starts thinking Zack's accomplishments are his own, but that's basically it. No personality change at all (besides the change that comes naturally with thinking that he's super awesome and badass rather than a friendless, lonely failure) He forgets about Zack but starts believing he fulfilled his own dream, which was to be in SOLDIER, and Zack became an avatar for himself when they went back to Nibelheim and it was destroyed - no personality or memory absorption involved.
