No opinion on the other two because I haven't seen the canons, but I genuinely don't remember Gothel expressing any sort of genuine fondness or affection for Rapunzel as a person. I got the impression that anything she ever did to keep Rapunzel content and entertained was done grudgingly, to shut her up and keep her compliant. Even more so than the fact that her only gestures of affection are directed at Rapunzel's hair, the way Gothel acts and refers to her when Rapunzel isn't present made that pretty clear, afaic.
