It is because ever since 9/11 we've been told to over simplify things, it makes dehuminization easier, it makes hate easier. That and thinking is hard, some people find that it is so painful they just don't bother so they default to the most simplistic model possible. Those two things have trapped a lot of people in junior high mindsets where you just chant "yah boo" for the baddie and "ooh-ra" for the goodie.

One day we'll start have real multi faceted characters again. That'll be the day we finally start moving forward as a species again too.

On the other hand, at least with Gothel, Disney needed to oversimplify her character to make her a villain. From the discussions about Tangled I've seen, here and elsewhere, there are a lot of people who see nothing wrong with the real-world analogue to Gothel's style of "parenting"--subtly undermining a child's sense of self to keep them from becoming a fully developed person. There are a lot of people who think that it's only abuse if it leaves bruises, and a lot who can't tell when a "strict" upbringing crosses the line into abuse.
