The entire Elder Scrolls series. Then again, it seems like a Protagonist with one or two character traits and everything else mostly blank-slate-y tends to get much more in terms of fan-love. Like, Skyrim: completely customizable totally empty ready-to-be-imagined Dragonborn: very little fanworks. Commander Shepard: hard-ass, tough, voice-acted: FUCKING TONS of fanworks.

So blank slate is good, but don't make it TOO blank or you lose the potential for fan-attachment to the character.

I dunno. The main character of Harvest Moon doesn't even have a real name, right? But he's (and now there's a she) pretty popular. Although, he does have a design. Maybe it's mostly dependent upon having a set physical appearance.

Clearly you've never been in the TES roleplay scene. There is such a plethora of fan-characters and talented artists who draw their own and other people's characters. Maybe it's not as visible as DA or ME fandoms, but there's a lot there.

Personally I love it more than the vaguely defined but not blank-main character. Seeing people have full control of their own characters but still sharing lore and a setting is so interesting to me.
