It has also been stated numerous times that even though Hannibal has affection for Will, that doesn't mean he wouldn't kill and eat Will if he suddenly felt like it.

I'd also argue that him helping Will "become truer to himself" isn't necessarily a good or kind thing, considering it could easily mean he wants Will to embrace his inner darkness and become a killer.
