I think Gothel was a good person at some point but she's lived a few hundred years and is probably pretty crazy. Plus a Princess villain is rarely ambiguous. They made sure that young kids could tell Gothel is a shit.

If she had cared just a bit more she probably could have kept Rapunzel a lot easier. Take her to see the lights from a distance. Dang.

In the other cases...they're still people. Just not very good ones.
