It cycles.
When I first get into a fandom, I'll try to get to know all the canon there is.
I then apply this knowledge rigidly to my fic/art/essay preferences. And as the fandom love wears on and I can see the patterns and tropes and start to run out of canon-fic I go over to AUs, though I usually keep a minimum of canon characteristics in my head.
Book fandoms hit me harder most times though, because so much canon material I can take directly off the pages to compare.

I should add, that this applies to adaptions too.
